BLUEBERRY MUFFIN PROTEIN BALLS

The Grammy Special! 😂👩🏼‍🍳 Blueberry Muffin Protein Balls

Okay so before we jump into the “recipe,” my mom, future Grammy, really wanted to make something she would enjoy for breakfast or for a quick snack.

She has been noticing that since she is now home all the time and not traveling or running around like crazy, she is eating more throughout the day but not always the best options.

My mom is not someone to eat big meals and often forgets to eat so the mindless snacking is driving her crazy. She wanted something she could grab that was nutrient dense and would satisfy her for a while

SO, we grabbed my food processor (a powerful blender will work as well!) and began putting in the ingredients SHE requested and enjoys.

RECIPE:

  1. 1 cup Pecans
  2. 1 cup pitted Dates
  3. 1 cup Unsweetened Coconut Flakes
  4. 2 TBS Agave (maple syrup or honey would work also)
  5. 1 tsp Vanilla
  6. 1 tsp Cinnamon
  7. Pinch of Pink Salt

Then blend it all together until mixed really well, about 1 minute.

Since my mom wanted a nutrient dense option, we wanted to make sure protein was included  🙌🏼

So we added:

  • 2 scoops Level 1 Blueberry Muffin (free shipping linked)
  • Slowly add about 4 TBS of water while blending, just enough until the mixture is combining well!

Next, simple roll them into balls!

This recipe made about 20 Protein Balls!

These Blueberry Muffin Protein Balls are a great nutrient dense option for my mom to enjoy with her morning coffee or when she is mindlessly snacking 🍪👏🏼 

But remember, even though these are healthy, they are very nutrient dense so don’t go eating the whole batch!

We like to keep them in the fridge or in the freezer, I eat them slower when they are in the freezer because they are not so readily available 😋
